In 2010, I joined the team at Sofitel Lisbon Liberdade, where I particularly enjoy creating dishes that blend cultural traditions while showcasing fresh local ingredients and French cooking techniques. Portugal is a treasure trove of good produce: fruit, cured meats, unique cheeses… Seafood is always present on my menu. I created the “Sea Mix” to allow guests to sample the wonders of the Atlantic Ocean – such as Algarve shrimp, black mussels, sea urchins and red mullet – depending on the catch of the day.
